This chicken and nectarine salad could quite possibly be our new favorite! There aren’t even that many ingredients but the way that they work together is amazing! We think this recipe is perfect for so many different occasions. It can be assembled very quickly and looks pretty enough serve when entertaining. You can make the chicken ahead of time and literally just throw it together in a matter of minutes.

We used our most favorite dates for this salad. They are from ranchomeladuco and are by far the best dates that we have ever tasted. That says a lot because we eat a lot of dates! The are huge and perfectly plump and sweet. We also chose to add a nectarine because they are so delicious and in season right now. We can’t get enough summer fruit. Add in the toasted pecans and blue cheese crumbles, and you have a beautiful, colorful and really tasty salad.

For the dressing, we thought a simple Dijon vinaigrette would be the perfect complement. It’s so simple to make, and we pretty much always have it on hand. We suggest doubling the recipe and storing it in a mason jar or airtight container in the fridge for your next meal! For the Salad:

  • 1 head red leaf lettuce, chopped
  • 1 ripe nectarine, pitted and sliced
  • 1 grilled chicken breast, sliced thin
  • 3 medjool dates, chopped
  • ¼ cup toasted pecans or walnuts
  • ¼ cup blue cheese, crumbled

For the Dressing:

  • 1 small clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon raw honey
  • ¼ cup white wine vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

Step 1:

For the dressing add all ingredients to a blender or use an immersion blender and blend on high until combined.

Step 2:

Add lettuce to a large salad bowl. Line in strips across the top – sliced nectarines, chicken, dates, pecans and blue cheese.

Step 3:

Serve with dressing on the side or toss to coat and serve.
