Just combine the ingredients in a bowl but be sure not to over mix as that can make them tough or dense in texture. You want them to stay nice and airy and light. Form into a patty, coat with the panko bread crumbs and lightly fry them in a sauté pan until nice and golden brown.
These cakes make a perfect appetizer for your next party or can be served as a light lunch. Enjoy with nice glass of pinot gris and you have yourself a fantastic lunch! Yum!
