Garbanzo beans are one of those foods that are so versatile, you can use them in salads, hummus or in this case you can use them to make this healthy fudgy brownie batter. That’s called winning! For this recipe we combined organic garbanzo beans with natural peanut butter, pure maple syrup, cacao powder to give it that rich chocolatey taste, a splash of almond milk, vanilla, and a pinch of salt. Whip everything up in the food processor and before you know it you have created the tastiest, healthiest, protein packed, sweet treat. This dip makes the perfect snack to fill your hungry kids bellies after school, you can even pack it in their school lunch. You might want to make a double batch because we guarantee it won’t last long!
You can pair this chocolatey dip with fresh strawberries, whole wheat pretzel sticks, plantain chips, bananas or really whatever you want to smother it on…you can’t go wrong! You can feel good about serving this fudgy brownie batter to your kids, even though it looks and tastes like a decadent dessert. We love it when that happens…score! - 1 16 oz can S&W organic garbanzo beans, rinsed and drained
- ¼ C creamy natural peanut butter
- 3 Tbsp pure maple syrup
- 4 Tbsp cacao powder - can also use cocoa powder
- 3 Tbsp almond milk + more if needed
- 1 tsp vanilla
- ¼-1/2 tsp kosher salt
- **Optional - 2 Tbsp sweetened cacao nibs or mini chocolate chips
- Add all ingredients, except the cacao nibs, in a food processor. Blend until smooth, stopping occasionally to scrape down sides. Add more salt if needed, also use more almond milk to thin if needed.
