We might be a tad obsessed with paninis and this shaved chicken and pear panini is no exception. We are always looking for a way to kick up the sandwich game and we have knocked it out of the park with this recipe. These delicious little grilled gems are perfect for entertaining. We actually get requests for these all the time and once you try them, we are sure you will feel the same way. Paninis are really easy to make and you only need very few ingredients. We had some left over grilled chicken which was the inspiration for these guys. We like to use cibatta rolls because they are the perfect size.
All you need for this recipe is grilled chicken, a pear, fresh arugula, dijon and white cheddar cheese.
Simply slice the ciabatta rolls in half, spread with dijon, line with the thinly sliced chicken, pear arugula and cheese. Heat a panini press or a cast iron skillet then place the halves together and grill on panini press or in the skillet. If you are grilling the sandwiches in a skillet, you can heat another skillet to place on top of the panini to press it down and get the nice golden grill marks. Cook until the cheese and melted and sandwich is cooked through.
Serve with your favorite salad or soup or just simply enjoy as is!
- 4 ciabatta rolls, sliced through the middle
- dijon mustard
- 1 chicken breast, grilled and sliced thin
- 4 sliced good quality white cheddar cheese (can sub fontina cheese)
- 1 bartlett pear, sliced
- handful of fresh arugula leaves
- Heat a panini press or use a cast iron skillet.
- Line sandwich halves with dijon mustard. Top one side with grilled chicken slices, white cheddar cheese, sliced pears and arugula. Place halves together.
- Grill on panini press until melted and grill marks appear. If using cast iron skillet weigh the top of the sandwich down, flip and cook the other side equally.
