Not only is this a super duper easy breakfast treat or snack that tastes amazing, it’s also packed with some major health benefits which is a double bonus. So lets talk matcha…have you ever heard of catechin? Don’t worry, you’re not alone, neither had we until we started researching the benefits of matcha. Catechins are the most potent and beneficial of all of the antioxidants. In addition to the antioxidant properties, also add the fact that matcha green tea increases metabolism to help the body burn fat about four times faster. Boo yeah! There are a ton of other benefits of matcha as well but I think we’ve bragged enough about this powerhouse ingredient.
Moving on to chia seeds which are a major source of omega-3 fatty acids, rich in fiber, iron and calcium. Oh, and chia seeds are a natural antioxidant as well. So mix these two superpower ingredients with a little unsweetened coconut flakes, almond milk, honey and a splash of vanilla and you have one heck of an amazing breakfast. Not to mention that it’s super tasty and it won’t leave you hungry. Hopefully we have convinced you to give this matcha coconut chia pudding a try, it’s sure to impress!
- 1 C almond milk
- 1½ Tbsp Matcha Latte Powder
- 1 Tbsp honey
- 1 tsp vanilla
- 2 Tbsp unsweetened coconut flakes
- ¼ C chia seeds
- In a medium bowl add almond milk and matcha powder and stir until combined. Add remaining ingredients and mix thoroughly. Pour into 2 small mason jars or tupperware with lids. Store in thr fridge for 8 hours until set.
- Serve with additional coconut flakes, fresh fruit or a drizzle of honey.
