Sweet corn and quinoa is the perfect side dish! Not sure if you have ever been to Flower Child before but we both happen to be huge fans! One of the staples on their menu is this creamy sweet corn and quinoa. The kids happen to love it so when that happens, we are all in! We knew this one would be a hit if we could find a way to make it happen at home. The best part of this dish is that it’s like the easiest thing ever to make! It only has quinoa, sweet corn, parmesan and greek yogurt. I bet you don’t believe us! Well, please take our word for it and give this easy peasy recipe a try. Just follow these simple steps.
Cook the quinoa according to the package directions. Once it’s cooked, remove from the heat and add the corn, parmesan cheese, and yogurt. Season with salt and pepper. If it’s a little thicker than you like, you can always thin it out with a little milk.
This recipe makes a perfect side dish to go along with your favorite protein. Add some fresh steamed vegges or a salad and voila, dinner is served!
- 1 C (uncooked) quinoa, cooked according to package instructions
- 1 C sweet corn (fresh off the cob, canned or frozen and defrosted)
- ½ C grated parmesan cheese
- ⅓ C 2% greek yogurt
- S&P to taste
- Cook quinoa according to package instructions.
- Remove from heat and immediately add corn, parmesan cheese and greek yogurt. Season with S&P to taste. Serve immediately
