Our April feature in Scottsdale Health Magazine definitely had Easter in mind. An open-faced egg salad sandwich is the perfect way to celebrate the holiday. Made with 0% Greek yogurt you get the extra punch of protein without the fat of mayo, this egg salad is a crowd pleaser for sure. We have been getting a lot of great feedback from the magazine readers about this recipe. It’s a must try!!
