You are just going start by brushing your pita bread with some olive oil then grilling in on a grill pan or your bbq grill until you get some pretty grill marks on both sides of the bread. This will take about 3 minutes on each side. Then just set aside to cool then cut into strips.
Then comes the easy part, you simply assemble the rest of the fresh ingredients. In a large bowl, combine the tomatoes, red onion, kalamata olives, cucumbers, feta, mint, avocado and the grilled pita.
Drizzle with the olive oil and red wine vinegar and toss until nicely combined. Season with salt and pepper and your new favorite salad is ready to serve! You are going to love this one!
- 1 whole wheat pita
- 1 tsp olive oil
- 4 large tomatoes - like beafsteak, chopped
- ⅓ C red onion, sliced thin
- ½ C kalamata olives, pitted and halved
- ½ english cucumber, seeded and chopped
- ½ C feta cheese, cubed
- ½ C fresh mint, julienne-cut
- 1 avocado, chopped
- 2 Tbsp red wine vinegar
- 2 Tbsp good quality olive oil
- ½ tsp garlic, minced
- kosher salt and fresh cracked pepper to taste
- Heat a grilled pan or bbq over medium-high heat. Brush both sides of pita with 1 tsp olive oil. Grill for approx. 3 minutes per side until toasted and grill marks appear. Set aside to cool. Cut into strips once cooled.
- In a large bowl add chopped tomatoes, red onions, kalamata olives, cucumber, feta cheese, mint, grilled pita and avocado.
- In a small bowl whisk together olive oil and red wine vinegar.
- Drizzle over salad and toss to coat. Season with S&P to taste.
