Making your own nut butter is not only easier than you think, it’s also so unbelievably delicious…after you try it, you’ll wonder why you didn’t do it sooner. Unless of course, you are one of those people who are already “in the know” and well, if that’s the case, we clearly don’t need to tell you!! Maybe however, you have never tried making this recipe for vanilla bean cashew butter?!? This simple recipe is sooooo good!! We simply cannot get enough. It’s so delicious on just about everything. Ok, that’s a stretch but not too far off. One other perk is that making it yourself will save you money!! Jars of this stuff can cost you a pretty penny at the market…not to mention, you are subject to the kind they have available…which could mean, plain flavored or something you are not in the mood for…and not this amazingly sweet vanilla bean flavor! Are you convinced yet? Okay, keep reading…
Look how easy it is to just roast up the cashews on a baking sheet in your oven in under 10 minutes! So far so good…no complaining here…
Then take them out of the oven and toss them into your food processor and start processing away!! Go, go, go…like anywhere from 5-10 minutes….don’t walk away because you’ll want to use a spatula to scrape down the sides so nobody feels left out!
You’ll be amazed to see what starts happening!! It’s Butter!! Yay! So fun! Are you so excited?? Clearly we thought it would be fun to add a beautiful fresh vanilla bean (because when is that not fun?)…but there are so many different flavor enhancements you can do with homemade nut butters! Skies the limit people. But for now, take our advice and try this recipe. You won’t regret it! Along with the vanilla bean, you’ll just need some coconut oil, pure maple syrup, vanilla and some kosher salt! Easy peasy!
- 2 C unsalted raw cashews
- 1 vanilla bean
- 1½ tsp vanilla
- 1 Tbsp pure maple syrup
- 1-2 Tbsp coconut oil
- ¼ tsp kosher salt
- Preheat oven to 325. Spread cashews out evenly over a rimmed baking sheet. Roast for 8 minutes. Remove from oven and pour into a food processor. Process for 5-10 minutes, occasionally stopping to scrape down sides. Keep the food processor going until the cashews turn into butter consistency.
- Remove inner seeds from vanilla bean by splitting the seed down the middle with a pairing knife and scrape out the inner pulp with a spoon. Add vanilla bean pulp, vanilla,maple syrup, and salt to the food processor and let it run until incorporated.
- Add coconut oil to reach desired consistency. Store in an airtight container at room temperature or the fridge.
