This chicken and nectarine salad could quite possibly be our new favorite! There aren’t even that many ingredients but the way that they work together is amazing! We think this recipe is perfect for so many different occasions. It can be assembled very quickly and looks pretty enough serve when entertaining. You can make the chicken ahead of time and literally just throw it together in a matter of minutes.
We used our most favorite dates for this salad. They are from https://ranchomeladuco.com and are by far the best dates that we have ever tasted. That says a lot because we eat a lot of dates! The are huge and perfectly plump and sweet. We also chose to add a nectarine because they are so delicious and in season right now. We can’t get enough summer fruit. Add in the toasted pecans and blue cheese crumbles and you have a beautiful, colorful and really tasty salad.
For the dressing, we thought a simple dijon vinaigrette would be the perfect compliment. It’s so simple to make and we pretty much always have it on hand. We suggest doubling the recipe and storing it in a mason jar or airtight container in the fridge for your next meal! But for today, add these ingredients to your shopping list so you can make the most delicious chicken and nectarine green salad!
- 1 head red leaf lettuce, chopped
- 1 ripe nectarine, pitted and sliced
- grilled chicken breast, sliced thin
- 3 medjool dates, chopped
- ¼ C toasted pecans or walnuts
- ¼ C blue cheese, crumbled
- 1 small clove garlic, minced
- 1 tsp dijon mustard
- 1 tsp raw honey
- ¼ C white wine vinegar
- 2 Tbsp good quality extra virgin olive oil
- S&P to taste
- For the dressing add all ingredients to a blender or use an immersion blender and blend on high until combined.
- Add lettuce to a large salad bowl. Line in strips across the top - sliced nectarines, chicken, dates, pecans and blue cheese.
- Serve with dressing on the side or toss to coat and serve.
